The co-owner and the ideological inspirer of Layerz Café, the prize winner of Insider and the GQ Man of the Year in the nomination “Restaurateur of the Year”, “Palm for Restaurant Business 2018”. Glen has a great experience behind him, he was working in South-East Asia, London and Moscow. Among his most notable projects are Nedalniy Vostok, Glenuill, Zupperia, Avocado Queen, Lucky Izakaya Bar, Margarita Bistro, Cutfish, Moto.
Today, Glen is the chef in such restaurants as Eva, “13”, Cutta Cutta, Moro, Sangre Fresca, Joli, Layerz Bakery and the conceptual creator of the Layerz Café brand.

Layerz Café is a chamber place with long breakfasts to satisfy every taste, from light bowls and cheesecakes to nourishing cereals and compound author breakfasts created by Glen Ballis and Tom Halpin.

Layerz Café’s kitchen is built around a bakery, and the menu is exquisitely selected from different culinary traditions, which the chefs elegantly combine into a single whole: we have  classic dishes like pumpkin soup and chicken Kyiv, and katsu-sandwich with Japanese bread and the pâté with quince chutney.

The distinctive feature of Layerz Café is its own bakery. Several types of bread, crispy fluffy almond and banana croissants, sandwiches with hearty fillings, unusual fancy coffee cruffins, apple chausson, creamy brioches, and flavorful spongy tartines on sourdough made of six types of flour are baked here every day. The gastronomic potential is presented in the format of comfort food, but with delicate references and elegantly played with ingredients from Glen Ballis - Greek salad cooked according to the family recipe of Glen's mom, linguini with shrimp, gnocchi with parmesan, steak pie with stewed cheek, bowls with roast beef, chocolate tart and cherry clafoutis with gluten-free flour for the followers of healthy style.

The distinctive feature of Layerz Café is its own bakery. Several types of bread, crispy fluffy almond and banana croissants, sandwiches with hearty fillings, unusual fancy coffee cruffins, apple chausson, creamy brioches, and flavorful spongy tartines on sourdough made of six types of flour are baked here every day. The gastronomic potential is presented in the format of comfort food, but with delicate references and elegantly played with ingredients from Glen Ballis - Greek salad cooked according to the family recipe of Glen's mom, linguini with shrimp, gnocchi with parmesan, steak pie with stewed cheek, bowls with roast beef, chocolate tart and cherry clafoutis with gluten-free flour for the followers of healthy style.

Much attention is paid to the bar menu and coffee. Here 11 types of coffee drinks are presented – piccolo, filter, matcha latte, V60 funnel – from carefully selected coffee beans and served in specially designed coffee cups. For true connoisseurs, changing varieties of single origin coffee are presented.

Long breakfasts are features of the cafe, here they are served from 08:00 a.m. to 04:00 p.m. The varied menu guarantees a nutritious and balanced start to the day. You can choose a full “Scandinavian”, “Australian”, “Healthy” breakfast or assemble a dish to your taste from toast with scramble and topping in the form of avocado, mortadella or salmon, enjoy oatmeal porridge with berries and honey, green buckwheat with chanterelles or shakshuka with spicy flatbread.

Lunch


Layerz Café launches lunches from chefs Glen Ballis and Tom Halpin. On weekdays from 12:00 p.m. to 17:00 p.m., guests are offered a lunch menu with a wide selection of interesting dishes for every day and wines by the glass at democratic prices. The team plans to update the lunch menu every month, delighting guests with delicious, seasonal news. And for those who prefer not to leave their workplace during lunch, Layerz will deliver a hot lunch right to the office.
